Quinoa is rich in calcium, magnesium, iron and phosphorus. It has twice the amount of magnesium than rice and wheat and exceeds beans by more than 20%.
With only 20 grams of quinoa flour consumption, 10% of the magnesium requirements in children, adolescents and adults are covered, making it a good source of this micronutrient.
Regarding vitamins, the content of thiamine and riboflavin in quinoa is similar to that of common cereals. Quinoa is a good source of thiamine: consuming 22 grams of whole quinoa or in flour covers up to 20% of the requirement in children from 1 to 8 years of age and 10% in adults and adolescents.
Quinoa is one of the best sources of vitamin E.
It is also an excellent source of ɣ-tocopherol, of biological relevance for its anticancer and anti-inflammatory potential.
Quinoa contains significant amounts of vitamin C, the presence of which is not common in cereals.
Quinoa has been found to be rich in folic acid, a B vitamin that is very important during pregnancy because it helps prevent birth defects in the brain and spinal cord called neural tube defects. It is also essential to prevent anemia. The content of this vitamin in quinoa is ten times higher than in wheat.
CONSUMPTION MODE:
It can be consumed by the general public. Do not consume directly, it must be subjected to cooking prior to consumption:
- Before cooking the quinoa, rinse it with water. Once rinsed, combine 1 cup of quinoa with 2 cups of water in a medium saucepan and bring to a boil. - After it starts to boil, cover the pot and reduce the heat to medium-low and simmer for about 15 to 20 minutes until the water is absorbed.
- It can also be roasted and later consumed in the form of flour.
- The quinoa grain can be consumed boiled or expanded in breakfasts, drinks, soups, yogurt and milk.
- As flour it can be added to soups, creams, porridges and pastries in general.
