Kiwicha is a source of essential amino acids such as lysine that enhances brain development, learning and memory.
It contains iron, potassium, zinc, vitamin E and vitamin B complex and protein and a high level of leucine.
Suitable for celiacs and ideal for malnutrition problems due to its high nutritional value.
Kiwicha is a good source of tocopherols and tocotrienols, as well as folic acid and biotin. It is also rich in calcium and iron and its consumption satisfies the recommended daily intake of these elements. The calcium/phosphorus ratio (simultaneous presence that improves the absorption of both elements) is nutritionally very adequate.
It can be consumed by the general public. Do not consume directly, it must be subjected to cooking prior to consumption:
- To prepare the kiwicha, first wash it several times and soak the night before. Combine 1 cup of kiwicha with 2 cups of water in a pot. Boil. Cover the pot and simmer over low heat until the kiwicha is soft (approx. 20 min.). Strain in a fine mesh.
- It can also be roasted and later consumed in the form of flour.
- The kiwicha grain can be consumed boiled or expanded in breakfasts, drinks, soups, yogurt and milk.
- As flour it can be added to soups, creams, porridges and pastries in general.
